It’s my favorite time of year, when the new Fall cookbooks start coming out. But this is no ordinary cookbook. I’ve had the immense pleasure of working with Jessica Merchant of How Sweet It Is for the past couple of years, and I’ve been drooling over this one ever since I first met her and read her book proposal for Seriously Delish. Well today is the day — the book is in stores everywhere, from Barnes & Noble to Amazon.

While many of you were hitting the beach for a last hurrah of the summer over the holiday weekend, I was home using my advance copy of Seriously Delish to make my favorite meal of the day, breakfast. First up from the book, Jessica’s amazing Breakfast Risotto!

Forget what you think you know about risotto. Yes this uses Italian-style arborio rice, but you pour it into a baking dish with stock and onions and BAKE the rice. No stirring at all!

Toss a few links of spicy Italian sausage (casings removed) into a skillet in the meanwhile.

I altered mine just a bit and added the chopped scallions to the skillet to soften a little.

Here is the magic — look how perfectly cooked the rice turns out. Again, no stirring at all. Just amazingly tender rice.

Of course the dish wouldn’t be complete without bacon. That’s a given.

Then you mix up the sausage and bacon with the tender rice.

Another given, since this is a breakfast recipe after all — you serve it with an egg on top, and some chopped chives. I don’t know if my photos do justice to how yummy and satisfying this dish is. I can’t wait to try more recipes from Seriously Delish soon. To all my foodie friends, you need this book.

    I never thought about “baking” risotto, but this dish certainly looks amazing.
    I’d probably skip sausage and add a lot more bacon, but that’s just me. 😉
